Ingredients:
- 2 (12 oz) Delmonico steaks, at room temperature
- 2 tsp kosher salt
- 1 tsp freshly ground black pepper
- 1 tbsp olive oil
- 2 cloves of garlic, minced
- 2 tbsp butter
- 2 tbsp chopped fresh parsley
Directions:
- Remove the steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking.
- Preheat your oven to 400°F (200°C).
- Season the steaks generously on both sides with kosher salt and black pepper.
- Heat a large cast-iron skillet over high heat. Add the olive oil and wait until it begins to smoke.
- Add the steaks to the skillet and sear for 2-3 minutes on each side, or until a crust forms.
- Transfer the skillet to the preheated oven and cook the steaks for 6-8 minutes for medium-rare, or until they reach an internal temperature of 130°F (54°C).
- Remove the skillet from the oven and transfer the steaks to a plate. Cover with foil and let them rest for 10 minutes.
- While the steaks are resting, return the skillet to the stovetop over medium heat. Add the butter and garlic and stir until the butter is melted.
- Once the butter is melted, add the chopped parsley and continue to stir for another minute.
- Slice the steaks against the grain, and spoon the garlic butter sauce over the top of the steaks.
- Serve the Delmonico steaks with your favorite sides, such as roasted vegetables, mashed potatoes, or a salad.
Tips:
- Delmonico steaks can be quite thick, so it’s important to let them rest after cooking to allow the juices to redistribute throughout the meat.
- If you prefer your steak more well-done, you can cook it for an additional 2-3 minutes in the oven.
- To add even more flavor to the steak, try marinating it for a few hours before cooking. A marinade made with olive oil, red wine, garlic, and herbs is a classic choice for Delmonico steaks.
- Delmonico steaks can also be cooked on a grill. Simply preheat the grill to high heat and grill the steaks for 4-5 minutes per side for medium-rare.
- Delmonico steaks are best served medium-rare for maximum tenderness and flavor.
